I like to cook whole chickens for dinner as they last a long time and provide many different meal options.
Day 1 Dinner: Roast Chicken & your choice of sides
Day 2: Lunch: Chicken sandwiches
Day 2 Dinner: Chicken casserole or chicken pot pie
Day 3 Luch: More chicken sandwiches or leftover dinner
Day 3 Dinner: Chicken Soup with broth made from boiled carcass
Day 4 Lunch: Any of the above leftovers
Sometimes I make enough soup to stretch that out to 5 days - other times if I feel I'm getting tired of eating chicken I make the broth and then freeze it for using later.
